Fan's Cured Meat in Pancakes
Fan's Cured Meat in Pancakes is one of the traditional Shaanxi delicacies. In fact they are pancakes made of high-quality wheat flour stuffed with cured meat. Prepared with high quality meat, Lazhi meat is well stewed with broth of the preceding years.



Shredded Pancakes in Mutton or Beef Broth
Shredded Pancakes in Mutton or Beef Broth is a local Moslem delicacy honored as “a superb dish in Shaanxi”. There is a particular way of eating the Baked Bun Soaked in Mutton Soup. When the customers are served, the restaurateur will first offer the kind of hard dried pancake and the customers will break the pancake into small pieces, and then give it back to the restaurateur for cooking the shredded pancake with mutton in delicious soup. Hulutou
Hulutou‘s raw materials are intestine. Before it is served, the customer needs to break the pancake into small pieces, then the chef soaks them in the boiling bone soup three or four times with pork intestine, pork tripe, chicken, sea cucumber and squid on the top. Afterward, lard, and greens are added to it. It is often served with preserved garlic and chili jam.


Buckwheat Noodles
Buckwheat Noodles are made through pressing the buckwheat flour through pressing the buckwheat flour through the special device with holes. They can be served either hot or cold. If it is served cold, flavor it with salt, vinegar, mustard, garlic sauce and hot chili. If it is served hot, warm it up in the hot soup and scoop it up and top it with stir-fried vegetables and meat. Zeng Gao
Zeng Gao is a traditional snack for breakfast in Central Shaanxi. It is made from glutinous rice and dates in a steamer which is developed from an ancient cooking vessel functions such as enriching the blood and calming the nerves and Zeng Gao has a strong flavor of dates and is soft, sticky and tasty.


Cold Noodles
Cold noodles are generally made from the wheat or rice flour through steaming. Cold noodles are served after they are mixed with gluten, bean sprouts, sliced cucumber, chili oil, soy sauce, vinegar, and garlic sauce. It is usually served as cold snack. Sometimes, they can be served as a hot snack after they are stir-fried with sliced meat, sausage and greens.

Qishan Noodles with Ingredients
The noodles must be hand-made of good wheat flour. The ingredients include pork shreds, day lily, egg, wood fungus, and bean curd which are flavored with a variety of spices. Before they are served, the noodles are first scooped and then mixed with ingredients. There is more soup, which taste sour and hot, than noodles in the bowl.


Qianxian Guo Kui
Guo Kui is thick in the middle and thin on the verge with designs of the wheel on the surface. It is crisp and tasty and is always a good present for friends and relatives. When it is made, the wheat four is mixed with a minimum amount of water and then baked over low flame so that it is easy to be stored and handy to take because it contains very little moisture. Guo Kui is one of the “ Ten Strange Features” in Central Shaanxi and it is often described as big as a lid of wok.
